This is the sort of dish, you can throw in whatever you want to make it your own. I used all sorts and just kept adding and adding to it. Its the perfect hangover cure to tuck into with a nice chunk of fresh bread and a glass of fresh OJ.
This could feed four people, or if your like me and my boyfriend (greedy!) we shared this between us.

Preheat the oven to 200 or turn on your grill!
This is literally as simple as, chucking it all chopped up into a pan, and frying it off, making sure the chorizo is crispy and the bacon is cooked.
Crack in the eggs over the amazing tasty mixture and then turn the heat down and slowly cook so the eggs don’t over cook on the bottom.
Then place under the grill for a further 5/10 minutes until the eggs are cooked.
Sprinkle over some coriander and if you like it spicy, a little splash of sriracha sauce goes very nicely!
Serve at the table in the pan, with fresh bread and OJ for everyone to tuck in.
